Mom took me to Dekalb Farmer's Market on Friday where among many other things I picked up almost two pounds of ginger for about $1.50. I'm trying to turn it into crystalized ginger so it has been simmering away in the crock pot with sugar syrup for about 8 hours today. Once I fish out all the ginger bits and pieces I'll have several cups of ginger infused syrup left that I need to figure out a use for.
