I'm making my first gumbo roux in a cast iron pan with my other hand. It didn't really occur to me that this one hour process could really be much worse than making risotto, but ohhhh it is. There's not even any broth adding to liven things up. No tasting. No ingredient adding. Just stirring. This best be damn good.
