Our veggie delivery included a small watermelon (half eaten after lunch), 4 tomatoes, and two massive zucchinis (plus other assorted things). Zucchinis have never been my favorites but I found a great recipe for a sort of zucchini pancake that involved a little parmesan, egg, and bread crumbs then I pan fried them in olive oil and squeezed lemon over them. Zucchini made tasty! I was amazed. Combined with Insalata Caprese and chicken salad, they made a wonderful summer dinner.

It was very simple. Two lbs of shredded zucchini, I tried to squeeze the liquid out and left it to drain a bit. Mix in one beaten egg, 1/2 cup of parmesan (I used a good bit less because we're low on parmesan), 1/2 cup minced onion (I grated mine on in) and enough bread crumbs to tighten it all up enough to make into patties (the recipe says start at 1/4 cup but I'm certain mine required a good bit more than that). They recommend letting them set up for an hour in the fridge. Dredge the patties in more breadcrumbs or flour before browning each side in olive oil. Squeeze some lemon juice on top. :) Easy. They're a bit soft so I used my biggest spatula and a gentle hand when flipping.
